The Present Status of Marketing Milk in the United States with Special Reference to Economies in Methods of Operation in the Marketing Facilities
The dairy cow has well earned the title of "foster mother of the human race," for no other animal has done so much to nourish the human family as she has. Her product is milk, a food intended by nature for promoting growth in the young. "Market milk" is a term applied to milk consumed in its fluid state as contrasted to milk used for manufacturing products such as condensed or evaporated milk, butter, cheese, ice-cream, etc.Market milk appears in this form upon almost every family table; it is the chief food of infants and growing children and is also used by grown people, being especially useful in the diet of persons suffering from certain diseases. Furthermore, milk is used by the housewife in the preparation of a large number of articles for the table.
