Thaw is a novel in four sections. The first three cover the same span of time, as the protagonists offer their takes on a slow Saturday night at the restaurant where they work. Roscoe narrates the first section. He performs menial preparatory tasks and is frustrated by his role. Manny narrates second section. He is the owner/executive chef of the restaurant and is worried about his failing marriage and business. Jackson narrates the third section. He is the promiscuous waiter, finding it hard to maintain his rascally ways as he nears the age of thirty. They are all obsessed with Ash, a waitress, who has some secrets of her own. The fourth section shifts to the third person as the characters converge at a nearby bar after the dinner shift.
