Marketing Fruits and Vegetables in the United States, with Particular Emphasis on Changes between 1940-1950

The fact that fruits and vegetables are a perishable agricultural product and that their daily consumption is of acknowledged nutritional value makes the study of their marketing a subject of importance to the economics of consumption. In a real sense, the almost year-round daily consumption of California oranges in Maine and Maine potatoes in California is a remarkable economic phenomenon. Equally remarkable is not only the extent to which the American housewife can be supplied daily with a wide variety of fruits and vegetables but the extent to which their preparation for the table requires less and less of her time because of changes in processing.
